OVERVIEW: To assist the Food Service Manager with the daily operations of the kitchen and dining facilities. To ensure that the preparation and service of all meals will make a positive contribution to the health and nutritional standards of Camp Redwood Glen and will enhance the overall experience of all our guests. Responsible for the care and upkeep of the commercial kitchen equipment of Camp Redwood Glen and to make necessary recommendations for the purchase of supplies and equipment needed in this service. DUTIES: Lead Cook: • Assist with any food service preparation assigned by the Food Service Manager • Be prepared to take responsibility for meal/snack preparation if required and ensure their readiness in accordance with the scheduled meal/snack times. • Be familiar with quantity requirements for menu items and assist with menu planning as needed. • Be prepared to order food and supplies as directed by the Food Service Manager. • Assist with all inventory procedures, making certain all food removed from stock room, refrigerator and freezer is properly accounted for and documented on proper inventory form. • In accordance with state and county health codes, properly store all leftovers and unused food after each meal/snack. • Coordinate the daily work schedule with the Food Service Manager when asked. • Assist with cleaning and care of kitchen, Dining Hall, and all work areas and equipment in keeping with established health department and industry safety standards and codes. • Ensure that all kitchen clean up is completed immediately following each meal/snack. • Secure kitchen before leaving at the end of all scheduled events. • Maintain safe work habits in accordance with all government’s regulations. Make certain that deportment and behavior of those in the kitchen area is exemplary at all times and in keeping with professional standards. • Attend and participate in training and conferences as assigned by the Food Service Manager and Camp Executive Director. • Maintain a high standard of cleanliness in personal grooming and in living quarters. • Follow all Camp Redwood Glen Chef/Cook dress code requirements. • Assist the Food Service Manager in any duties as requested in an order to maintain a high level of efficiency in the kitchen operation. • Order replacement supplies through the Food Service Manager. Requirements QUALIFICATIONS: • Must possess and demonstrate an ability to work with people, including community groups, participants, campers, and staff in an affable, concerned and caring manner. • Must display the ability to and be accountable for the efficient scheduling of time and resources made available to perform task at hand. • Strong oral and written communication skills. • Self-motivated and have the ability to motivate others. • At least 3 years’ experience in a food service supervisor capacity. • Able to meet deadlines and work under pressure. • Detail oriented, accurate and precise. • Capable of handling and controlling multiple projects. • Demonstrate leadership skills with strong team player attitude. • Capable of maintaining high level of integrity. • Maintain confidentiality. • Energetic, personable and dependable • Ability to work with people from diverse backgrounds. • Must possess a valid driver license. • Must possess a current Serve Safe Food Handler Certificate – Food Protection Manager Certificate recommended. • Visual and auditory ability to identify and respond to environment and other hazards relating to assigned vehicles. • Computer literate in Microsoft Office (Word, Excel, and Publisher) required. Microsoft PowerPoint helpful. • Knowledge of Salvation Army practices and organization desirable.
